Roasted Delicata Squash Recipe

Ingredients:

  • Organic Delicata Squash
  • Coconut Oil or Coconut Oil Spray
  • Cinnamon
  • Pumpkin Spice
  • Himalayan Salt
  • Maple Syrup (optional)

Instructions:

Delicata Squash Preparation

  1. Clean the delicata squash with water
  2. Cut the delicata squash in half (hotdog style)
  3. Remove the seeds with a fork
  4. Cut delicata squash into 1/4 inch slices

Roasting Preparation

  1. Spray pan with coconut oil spray
  2. Place delicata squash on pan
  3. Glaze delicata squash with coconut oil spray
  4. Sprinkle cinnamon, pumpkin spice and himalayan salt on delicata
  5. Bake at 425 degrees for 25-35 minutes until delicata is tender and slightly brown
  6. **Flip delicata squash half way through roasting
  7. Drizzle maple syrup and serve
