Peach Burrata Salad

Can we just call this salad, the salad of summer 2020?

This Peach Burrata Salad has all of the right ingredients for a party in your mouth. Every bite is so different and flavorful.

I definitely don’t own bragging rights over this salad, as I found it from @christinebarraco’s Instagram account, but I do believe we absolutely need to have this recipe on the blog. That way when next summer rolls around, we have this recipe saved and ready to go!

Okay back to the salad.

I love this salad for so many reasons: it’s flavor, it’s look, it’s sooo easy to make… I mean the list goes on.

For one thing, because this salad gives off such a “wow factor,” it is perfect to make if you’re hosting a dinner party. Your guests will be dying for the recipe, bible.

The peaches just scream summer and the burrata gives it a soft, comforting taste. The pine nuts add an extra flavor and crunch. I LOVE using arugula, for that peppery taste.

Peach Burrata Salad

Ingredients:

  1. Arugula
  2. 1 Peach
  3. Burrata
  4. Pine Nuts
  5. Balsamic Glaze
  6. Olive Oil
  7. Himalayan salt
  8. Pepper

Directions:

  1. Take a handful of arugula and lay it out on your dish
  2. Slice up the peaches and place them on your bed of arugula
  3. With your hands, take pieces of burrata and place them throughout the salad
  4. Sprinkle some pine nuts on top
  5. Drizzle olive oil and then balsamic glaze
  6. Top with pepper and Himalayan salt
