Paleo Chicken + Veggie Soup

There is nothing better than a bowl of nourishing chicken soup during the winter! This recipe is so simple and easy. The only thing you have to do is prep – and the crock pot will do the cooking for you over night!

It’s not only so healthy and delicious, but it’s also soo easy to meal prep. You will have meals for work for the entire week!

I’ve been making this recipe over and over again for the last two weeks and still haven’t been tired of it.

I like to store my soup in mason jars that way I can grab and go. Everything is fast, efficient and healthy.

Paleo Chicken Soup

Ingredients:

  • 1LB Organic Bonless Chicken Thigh
  • 1 Organic Bell Pepper (I prefer Red or Yellow)
  • 6 Organic Roma Tomatoes
  • 4 Organic Carrots
  • Fresh Thyme Sprigs
  • Parsley
  • Organo
  • Herbs De Provence (I use the Trader Joes brand)
  • Himalayan Sea Salt

Instructions

  • Place the chicken thigh in your crock pot
  • Dice bell pepper and carrots into bite size pieces, and 2 tomatoes and place on top of the chicken in the crock pot
  • Slice 2 more tomatoes in half and place in crock pot
  • Drop the last two WHOLE tomatoes in the crock pot (not dicing or chopping – leave them whole)
  • Season the veggies + chicken with pink himalayan sea salt, parley, oregano and 4 heaping teaspoons of herbs de provence
  • Pour enough water into the crock pot to cover all the goods.

Cook:

  • Set your crock pot to a low temperature.
  • Let cook overnight or for 8-9 hours.
  • In the morning, use two forks to shred the chicken and tomatoes.
  • Stir and enjoy!
